Technology and gastronomy have always gone hand in hand—but this time, it’s not about foams, test tubes, or molecular techniques. This time, tech is helping launch Peruvian cuisine into the spotlight like a perfectly timed home run: powerful, direct, and unforgettable.
Will it be a home run? With the talent behind it, no doubt about it!
The series is called Off The Table, a pan-Ibero-American production that celebrates the fusion of cultures, the stories behind iconic dishes—and some lesser-known ones too—along with ancestral techniques and modern culinary approaches. It will all be revealed episode by episode on the platform NewWorlder.com.
The real stars of the show are the flavors, ingredients, and techniques behind Peru’s superfoods. But just as important are the chefs leading this journey: Gastón Acurio, Mitsuharu Tsumura, and Virgilio Martínez—true ambassadors of Peruvian cuisine on the world stage.
Mitsuharu Tsumura, a proud Marca Perú ambassador and chef at Maido, kicked off the series on Thursday, March 2nd, by exploring the richness of Peru’s oceans. His episode showcases the bounty of the sea while inviting viewers to reflect on the importance of respecting the ecosystem and honoring the daily efforts of local fishermen.
This message of environmental awareness couldn’t be more relevant. Climate change and its effects are already impacting not just Peru, but also regions like Australia, the Galápagos, the Philippines, and beyond. Everything is connected, and what happens in one part of the ocean affects us all.
With oceans that feed a vibrant culinary heritage, and a cuisine gaining global acclaim, protecting our natural resources is essential. Pollution, greenhouse gases, and growing demand are accelerating changes that should take centuries. We can’t afford to stay passive.

On April 6th, Virgilio Martínez—another Marca Perú ambassador and chef at Central—will invite viewers to join him in preparing a traditional Pachamanca, one of Peru’s most ancient and symbolic dishes.
Then, on May 4th, Gastón Acurio will close the series with a special episode filmed at the Pachacútec Foundation, highlighting the creativity and determination of the Peruvian people, and how food can be a powerful tool for creating equal opportunities.
